My very late breakfast. #Coffee #Vegan #Nomz (Taken with Instagram at Ritz Charleston)

6 oz (super firm) tofu 90
lemon pepper
tabasco (smoked chipotle)
2 tbsp pineapple salsa 10
1 tbsp black beans 15
1 tbsp frozen corn 9
mini tomato, diced 8
Dice the tomato and put it in the oven on broil. Dice the tofu and put it in a nonstick pan over med/high heat. Add lemon pepper to taste, and shake the pan occasionally to make sure the tofu doesn’t stick to the bottom (some of it might, that’s okay. Just use a spatula to loosen it up). Once the tofu is crispy and browned, add a few drops of tabasco, and shake the pan again to coat evenly. Add the rest of the ingredients, and cook until heated.
Feel free to change it up, add whatever you have lying around! Just keep it healthy.

Finally had Sunday brunch at Bfoods today after not having it for >6 weeks!
Then I have a vegan philly cheesesteak with french fries for dinner at the Owlery which also ruled! Then Gnat and I got ice cream and ate that. Post race reward day ftw.
